This American Pacific Northwest grown hop is a newer variety that is widely used for both bittering and aromatic characteristics. Its alpha acid content of about 12% to 14% makes Calypso an excellent bittering hop. Calypso has all kinds of flavor descriptions including the most common of apple, pear, and citrus. We also seen melon and tropical fruits which would make sense based on its name. We also read about people getting pepper, cherry blossom, and mint. That is a wide range of flavor! We see it used a lot in IPA’s and Pale Ales but of course you could use it in darker beers as well even Stouts.
