Glycerine

Used as a finishing additive to improve mouthfeel and add a touch of sweetness without adding fermentable sugars, making it a valuable tool for balancing dry or low-alcohol brews and creating a smoother, more full-bodied product. It also acts as a flavor balancer, smoothing harsh notes and tannins, though it should be used sparingly to avoid a greasy or soapy texture.

How and When to Use Glycerin

  • Timing: 
    It is typically added after fermentation, often as a final finishing step, allowing time to incorporate and mellow in the brew. 
  • Dosage: 
    Start with a small amount, such as 3-5 ml per bottle or about 1 ounce per gallon, and add more gradually to taste, as overusing glycerin can result in a greasy texture. 
  • Application: 
    Use a syringe for accurate measurement and add it to the bulk container, such as a carboy, then allow it to integrate for a few days before bottling.
